Industrial Meat Drying Machine

An industrial meat drying machine uses hot-air circulation to dry cured and marinated meat products — jerky, biltong, cured pork belly, dried sausage, ham, and dried fish — at 30-140 °C with uniform airflow across 192-576 trays per batch. The same class of oven handles seafood drying, which makes it one of the most versatile secondary machines in a meat or fish processing plant.

Working Principle

Low-noise axial fans push heated air through a heat exchanger and across every tray level, then recirculate it. Recirculation is the efficiency key: exhaust loses only 10-20% of the air mass per pass, so heating demand stays low once the chamber reaches setpoint. A humidistat-controlled exhaust damper vents moisture-laden air and replaces it with fresh dry air, holding the chamber at the target humidity band — the parameter that actually controls drying speed.

Applications: Meat and Seafood

Beef jerky and biltong: long strips dry at 55-70 °C for 6-10 hours to 30-35% moisture. Cured pork and duck (Chinese-style lap cheong, cured belly): 45-55 °C with staged humidity reduction. Dried fish: whole or split fish dry at 30-40 °C for 10-16 hours — the same machine serves fish-processing plants, which is why seafood producers frequently share one dryer between meat and fish lines with a full clean-down between runs. For upstream meat preparation, see the meat processing machines catalog.

Drying Profiles Matter More Than Temperature

Beginners set one temperature and wait; processors who sell consistent product run staged profiles: a high-humidity equalization phase (surface moisture spreads inward), a main drying phase at target temperature, and a finishing phase at reduced temperature to avoid case-hardening — a sealed outer layer that traps moisture inside and causes mold in packaging. Program the controller with at least three stages per recipe.

Frequently Asked Questions

Can one machine dry both meat and fish? Yes — with full CIP-style clean-down between runs. Plants running both daily often buy two compact units instead of one large one to avoid cross-contamination risk.

Electric or steam heating? Electric for simplicity and precise control under 60 kW; steam where a boiler already serves cookers and smokers — it cuts operating cost roughly 30%.

How long does jerky take? 6-10 hours at 55-70 °C to water activity below 0.85, the shelf-stability threshold for cured meat.
