Mincers cut meat into particles (3-12 mm). Bowl choppers emulsify meat, fat, ice, and seasoning into smooth paste — texture required for hot dogs, frankfurters, bologna. For coarse sausage use mincer; for emulsion sausage use bowl chopper.
Ice absorbs heat from high-speed cutting — keeps batter below 10°C, preventing fat smear and bacterial growth. Typical ratio: 10-15% flake ice by meat weight.
Vacuum removes air bubbles from emulsion, resulting in: (1) denser texture, (2) uniform color (no grey spots), (3) longer shelf life (30-50% reduction in oxidative rancidity), (4) better sliceability.
3-8 minutes typical: 1 min coarse chop, 2-5 min fine emulsification, 30 sec discharge. Total cycle (load + chop + unload + clean) is 8-12 minutes.
Every 200-300 batches (3-6 months single-shift). Dull blades cause fat smear and batter temperature spike.
Only semi-frozen flakes (-4°C, pre-flaked with FMS-001). Fully frozen chunks damage blades.
