Small, discrete, free-flowing pieces: peas, corn, diced vegetables, blueberries and other berries, shrimp, French fries, and chicken chunks. The rule is piece size and separability: items that can float on an air bed freeze individually, while items that clump or sheet together belong in a different freezer type. Tell us your product list and we confirm which pieces run well together.
Pieces freeze in roughly 3 to 10 minutes depending on size, with evaporator temperatures around -35 to -40°C bringing the core to -18°C. That speed is the quality story: rapid freezing forms small ice crystals, protecting texture and stopping cells rupturing, so product thaws firm rather than limp. It beats a tunnel on small pieces, with visibly better crust.
Upward air velocity lifts and tumbles the pieces so they float on a cushion of cold air, exposing every surface to the flow and keeping them apart while they freeze. That is why output is truly individually quick frozen, with no clusters and no pieces stuck to the belt. Two-stage fluidization handles the spread of piece sizes in a mixed vegetable run.
The range covers 500 to 5,000 kg/h, with mid-scale two-stage units around 2,000 kg/h. Sizing works from infeed rate and piece size, because belt loading per square meter drives freeze time, and an overloaded bed stops fluidizing so clumping returns. We size against your peak product mix and confirm freeze time per product during commissioning runs.
Monthly evaporator defrost is the anchor task, because frost on the coil quietly steals freezing capacity and shows up as longer freeze times before it shows on a gauge. Quarterly fan bearing checks cover the air side. Stainless food-contact construction keeps washdown simple between product runs. Tracking freeze time per product month over month is the early warning that defrost is due.
